Gulabi Phirni

Rose flavored desserts are forever loved in the family. I had bookmarked this recipe just when I saw it. When I spotted the rose essence and syrup in the Indian store nearby, I grabbed it soon itself. The very next day I thought of attacking this recipe :). 

  

Serves : 4 ( 4 mini pudding bowls)

What's in it :

  • Basmati rice : 4 tbsp
  • Milk : 3 cups
  • Sugar : 1/3 cup
  • Cardamom powder : 1/2 tsp
  • Rose essence : 1 tsp
  • Rose syrup : 2 tbsp
  • Nuts : for garnishing



Let's do it!

  1. Wash and soak the rice for half an hour. Grind into a smooth paste with a little water. Mix this with 1 or 2 tbsp of milk and keep aside.
  2. Boil milk in a pan with cardamom. Add the rice+milk mixture to this and keep on stirring.
  3. See to it that lumps are not formed. 
  4. Add in the sugar and stir continuously. Let the stirring continue till the milk thickens.
  5. Add rose essence and syrup.
  6. Switch off the flame when it reaches a pudding-consistenc.
  7. After it reaches room temperature, pour into bowls, garnish with chopped nuts and refrigerate.
  8. This tastes best when served chilled.
