A very simple recipe. This makes a good combination for chapatis/rice. I love soya chunks so much that I always end up finishing the whole curry ;). Coming to the nutrition aspect, soy chunks are rich in proteins, iron and calcium, which makes this an excellent meat substitute for vegetarians.
What's in it:
- Soya chunk granules : 2 cups
- Onion : 1 big chopped
- Tomato : 1 big chopped
- Ginger garlic paste : 2 tsp
- Red chilli powder : 2 tsp
- Coriander powder : 2 tsp
- Garam masala : 1 tsp
- Fennel seeds : 1 tsp
- Cloves : 2-3 nos.
- Cinnamon : 1 stick
- Coriander leaves : to garnish
- Salt : to taste
Let's do it!
To cook soya chunks:
- Wash the soya chunks well, drain them. Boil water in a vessel with some salt in it.
- Add these soya chunks to it; let it get cooked well.
- Once cooked, drain and keep aside. When it is cooled, squeeze the water out of the soya chunks.
For the gravy:
- Heat oil in a non-stick kadai. Temper some fennel seeds, cloves and cinnamon.
- Add onions, saute well till golden brown.
- Add ginger-garlic paste, saute till the raw smell leaves.
- Now add coriander powder, garam masala and chilli powder, salt to this.
- Add the chopped tomatoes and blend everything well.
- Now the cooked soya chunks can go in. Stir well to blend in the masalas.
- Check salt level and add more if needed.
- Switch off the stove and garnish with some chopped corainder leaves.
- Enjoy with chapatis/rice !
