Mutton Pepper Fry

Back with a bang ! I have been very busy ( read : lazy ) all these days doing many things ( read : fooling around ) ; Then I felt it's high time I get back to work. There were busy days in between of course, we had an awesome trip to the Grand Canyon and Las Vegas ! But that was just for 4 days ;) . Anyways I have geared up again with a very full refrigerator. So more and more recipes coming up !

Now coming to this one, Mutton is not a regular member in our menu though we attack it whenever we go to any Halal store. Usually mutton coconut curry is made, but this was a day when I wanted to cook a dry mutton dish. This makes an excellent combination with roti/ ghee rice/ white rice.

What's in it:
  • Mutton : 1/2 kg
  • Onions sliced : 1 large
  • Shallots : 10-15 nos. chopped
  • Ginger garlic paste : 2 tsp
  • Tomato : 1 chopped
  • Coriander powder : 2 tsp
  • Garam masala :1 tsp
  • Pepper powder : 1 tsp
  • Oil

To Temper :
  • Curry leaves : 1 sprig
  • Fennel seeds : 1 tsp
  • Cloves : 2-3
  • Cinnamon : 1 stick

To Marinate :
  • Pepper powder : 1 tsp
  • Lemon juice : 1 tsp
  • Salt : to taste
  • Turmeric powder : 1/2 tsp
  • Garam masala : 1 tsp

Let's do it !
  1. Marinate the cleaned mutton pieces with items under 'to marinate' for 1 or 2 hours.
  2. Heat oil in a kadai, add the ingredients under 'to temper' list.
  3. When it is done, add shallots and onions and saute till they are golden brown.
  4. Add in the ginger garlic paste, saute till raw smell leaves.
  5. Now drop in the tomatoes, saute till they turn mushy.
  6. Now comes the masalas : coriander powder, pepper powder and garam masala.
  7. Add the marinated mutton pieces and mix well. Add water to this and cook closed till the mutton is done.
  8. Open the lid and cook till all the water is dried and the mutton is dry completely.
  9. Add some curry leaves to garnish.
