When you are in need of a quick snack and when you have some over-ripened bananas in hand, this recipe comes to your rescue ! The highlight of this recipe is that it is eggless, butterless and beater-less ;) ! This recipe was adapted from here.
Makes 8 mufins.
What's in it:
- AP flour : 3/4 cup
- Bananas : 2 nos.
- Sugar : a little less than 3/4 cup
- Vanilla essence : 1/2 tsp
- Baking soda : 1/2 tsp
- Baking powder : 1/2 tsp
- Chopped walnuts : 1/4 cup
- Vegetable oil : 1/4 cup
Let's do it !
- Pre heat oven to 375F.
- Peel and mash the bananas using the back of a ladle nicely. Add vanilla essence, oil and sugar to it and mix well with a spatula/whisk.
- Sieve AP flour, baking soda and baking powder in another bowl.
- Add this flour mixture to the banana mixture and fold well using a whisk. Do not over beat.
- Add in the chopped walnuts and give a stir.
- Line the muffin tray with muffin liners and drop the batter till 3/4th of the liner.
- Sprinkle some walnuts on top of the muffins.
- Bake them for 25-30 mins. Mine got done in 18 minutes .
These muffins were realy sweet, crunchy and very spongy ! A very quick recipe too !
