Gobi Manchurian

Gobi manchurian is one of the favorite vegetarian recipes in my home. This was a favorite choice while eating out as well. I used to think this as a very difficult recipe to make from the scratch. When I saw this in Nilgiris supermarket, Chennai, I thought of giving it a try and it turned out to be a huge success. One day when I read the ingredients of the mix , I felt I can make this without the help of the readymade mix and experimented on my own, and lo ! It was yummier than the mix  recipe ! Though this needs some time the taste makes us forget all those !

What's in it :

  • Cauliflower : 1 medium cut into florets
  • Onions : 1 large chopped
  • Capsicum : 1 small chopped
  • Spring onions : 2 stalks finely chopped
  • Garlic : 4 big cloves finely chopped
  • Tomato sauce :  4 tsp
  • Soy sauce : 3 tsp
  • Chilli sauce : 2 tsp
  • Salt : to taste
  • Corn flour : 4 tsp dissolved in 1/2 cup water
  • Oil

For the batter :

  • All purpose flour : 1/4 cup
  • Corn flour : 4 tbsp
  • Tomato sauce : 2 tsp
  • Soy sauce : 1 tsp
  • Red chilli powder : 1 1/2 tsp
  • Pepper powder : 1/2 tsp
  • Salt : to taste

Let's do it !

  1. Boil the cauliflower florets in some water with a pinch of salt and turmeric powder, drain it.
  2. Make a batter out of the ingredients under ' For the batter' with some water. The batter should be thick enough to cover the gobi florets; not too runny.
  3. Deep fry the batter-dipped florets and drain them on some paper towels.
  4. Heat a kadai, add some oil.
  5. When it is hot, add the chopped onions and garlic, saute for sometime.
  6. Now add the capsicum and spring onions and saute well.
  7. Let the sauces go in now alongwith required amount of salt.
  8. Take care not to add more salt as the fried florets also have salt in it; so adjust accordingly.
  9. Add the cornflour mixed in 1/2 cup of water to it and keep stirring. The gravy thickens now.
  10. To this add the deep fried gobi florets and give a nice stir.
  11. Switch off the stove and garnish with some chopped spring onions.
  12. Tasty gobi manchurian is ready !
