This month was savoury & sweet bakes at the Home Bakers Challenge as suggested by Shama. She had suggested a wonderful variety of recipes, out of which I chose Honey drizzled Semolina cake. This cake, as the name suggests, is made of semolina. There is no maida in it at all ! Interesting, isn't it ? It was yummy too!

Ingredients :
Unsalted butter : 1 stick
Sugar : 1 cup
Eggs : 2 nos.
Milk : 1/2 cup
Vanilla extract : 1/2 tsp
Fine semolina : 2 cups
Baking powder : 1 tsp
Baking soda : 1/2 tsp
Salt : a pinch
Method :
Preheat the oven to 350F. Grease a 9X13 inch pan, preferably square/rectangle with parchment paper.
In a mixing bowl, cream together butter and sugar.
Add the eggs and milk, mix well.
Add the vanilla extract.
Now, the batter looks curdled, but it is alright.
In another bowl, whisk together semolina, baking powder, baking soda and salt.
Add the dry ingredients to the batter, beat until smooth.
Pour batter to the greased pan, bake for 20-25 minutes. Mine took exactly 25 minutes.
The cake can be removed from the oven when it is firm and slightly golden on top. Also, the sides should just start to pull away from the pan.
Honey Syrup :
Ingredients :
Sugar : 1 cup
Water : 1 cup
Honey : 1/2 cup
While the cake is getting baked in the oven, make the syrup.
Combine sugar, honey and water stirring with a fork in a saucepan.
Bring this mixture to boil over medium high heat, stirring constantly.
Lower the heat and simmer till the syrup thickens.
As soon as the cake is baked, pour the syrup over the cake slowly on top.
The syrup can even be served with cut cake pieces.
