Chocolate cakes are, of course, everyone's favorite. In college, we used to celebrate all our birthdays by ordering a yummy chocolate cake from a nearby small bakery. It was just Rs.50 those days for that 1 kg cake. We had enough reason to order a cake almost every week, be it birthdays, or end of Internals, or even anyone's parents' anniversaries ;). That bakery made the yummiest chocolate cake we had ever tasted. I never even dreamt those days that I would bake a cake someday , let alone a soft, moist chocolate cake. After trying many recipes, I have finally got THE chocolate cake recipe, which is aptly named as the Black Magic cake !

Ingredients :
- All Purpose flour : 1.75 cups
- Granulated white sugar : 2 cups
- Unsweetened cocoa powder : 3/4 cup
- Baking powder : 1 tsp
- Baking soda : 2 tsp
- Salt : 1 tsp
- Eggs : 2 nos.
- Strong brewed black coffee : 1 cup ( I used Nescafe)
- Buttermilk : 1 cup
- Vegetable oil : 1/2 cup
- Vanilla extract : 1 tsp
Method :
- Preheat oven to 350F.
- In a large mixing bowl, whisk together all purpose flour, sugar, cocoa powder, baking soda, baking powder and salt.
- Once whisked well, make a well in the center.
- Add buttermilk, eggs, vanilla extract, vegetable oil and coffee to this.
- Beat on medium speed for 2-3 minutes or till mixed well.
- The batter will be thinner than normal cake batter.
- Pour this into greased cake tin. ( The original recipe says this yields 2X9" pans. I got one 9" square pan and 6 cupcakes.)
- Bake at 350 F for 30-40 minutes or till a toothpick comes out clean.
- Take out, cool in the pan for 15 minutes and then take out of the pan, let it cool down fully on a cooling rack.
- Slice and serve !
